Sweet, delicious, healthier wholewheat banana bread with fresh blueberries, almond flavour and a nutty crust. Perfect snack for kids.

170g whole wheat flour
60g ground almonds
3/4 tsp baking soda
1 tsp baking powder
2 medium banana(s) very ripe
2 medium egg(s)
70g coconut oil
60g honey
4 tbsp milk
1 tsp almond extract
110g blueberries
20g flaked almonds

The flaked almonds and bursts of fruity blueberry are everything in this blueberry and almond banana bread recipe. I cant get enough of almond flavour nor blueberries for that matter. Especially baked blueberries, all of the tanginess goes away and you are left with the most incredible sweet fruity flavour.

This recipe is based on my Cinnamon and Raisin Banana Bread recipe. Some of the flour has been replaced with ground almonds giving it a nutty flavour and texture. The honey has been reduced due to the natural sweetness of the blueberries.

Banana bread also makes a perfect snack for kids. They love bread and they love bananas, don’t all kids?

Making Banana Bread Healthier

  • Wholewheat flour is full of nutrients including vitamins, protein, calcium and iron which has all been stripped away from plain white flour.
  • Honey is a more natural sweetener and absorbed more slowly by the body than refined sugar which would usually cause our blood sugars to spike.
  • Natural Fruits blueberries and bananas are used in this recipe to create a natural sweetness meaning less sugar or honey is needed. Fruits also contain a load of wonderful nutrients. Once the fruits are cooked in the bread more of their nutrients is released and any toxins living on the fruit are killed.

Blueberry And Almond Banana Bread Texture

As some of the flour has been replaced with ground almonds the texture is more dense than traditional banana bread due to the lack of gluten in ground almonds. Gluten which is present in wheat flour gives bread more hold and structure so if you want a less dense bread then use 210g of wholewheat flour and leave out the ground almonds. You will still get a good almond flavour from the extract. The ground almonds also produce natural nut oils making this bread more moist and squidgy. Squidgy banana bread is the best banana bread.

Substitutes

You can certainly leave out the ground almonds and use 210g of wholewheat flour in this recipe. You can also use butter instead of coconut oil. Use the exact same amount of butter. You can also use vanilla extract instead of almond.

Preheat the oven to 165°C fan/325°C/Gas 3. In a large bowl combine the wholewheat flour, ground almonds, baking soda, baking powder and salt. Stir so everything is evenly distributed.

Melt the coconut oil just until melted in the microwave. Allow to cool while you get on with the next step.

In another medium bowl, mash the two ripe bananas until there are no lumps. With a fork, whisk in the eggs, milk, honey and vanilla extract. Stir in the coconut oil once cooled.

Pour the wet mixture into the flour mixture and mix until everything is combined. Stir in the blueberries and pour the mixture into the loaf pan. Sprinkle over a few extra blueberries and the flaked almonds. Put it into the preheated oven for 60 minutes.

Slice into 12 slices or 36 squares and enjoy!
