200g oats

50g rice crispies

75g 70% dark chocolatechopped

1 large bananamashed

100g + 1 tbsp coconut oilmelted

70g crunchy peanut butter

150g + 1 tbsp honey

200g greek yoghurt
Directions
These granola bars offer so much range of texture from the crunchy oats and peanuts, to the crispy cereal and the soft bite of dark chocolate. The flavours are really simple but make up exactly what you expect from a granola bar. Sweet, buttery and not to mention the tangy yoghurt topping.

Pre-heat the oven to 180°C fan/350°C/Gas 3 and line a 10x6 inch tray with baking paper. You can use a slightly different size. |

Melted the coconut oil and peanut butter in the microwave for 10 - 20 seconds. Stir in the mashed banana, honey until everything is combined. |

Stir in the oats and rice crispies. Chop the dark chocolate into small chunks and stir them in too. |

Pour the mixture into the prepared baking tray and spread out evenly. Try to press the mixture down so it is nice and compact. |

Pop it into the oven for 25 - 30 minutes until golden brown on top. Turn the tray 180 degrees near to the end to ensure even cooking. Once out of the oven allow to cool completely. |

For the yoghurt toppingIn a small bowl melt the 1 tablespoon of coconut oil in the microwave again, mix in the greek yoghurt and honey. Spread it evenly over the cooled granola then pop it in the fridge for 1 hour. Cut into 16 rectangles and enjoy! |
