Fruit & Nut Protein Bars

Delicious, sweet bites of fruit and nut granola bar made with your usual protein powder and a yummy yoghurt topping.

Ingredients

Adjust Servings:
50g coconut oil
50g honey
150g oats
50g whole almonds
30g pumpkin seeds
30g sunflower seeds
50g dried cranberries
100g dried apricots
30g protein powder
For the yoghurt topping
200g natural yoghurt
1 tbsp honey

These Fruit & Nut Protein Bars are sweet little healthy treats with a hit of protein. Protein bars can be expensive so why not make your own with left over seeds nut or fruits laying around in your cupboard for a fraction of the cost? Made with natural wholesome ingredients and your usual protein powder.

The natural yoghurt topping is also a little protein boost and makes them just so delicious. These bars remind me of the almond and apricot Eat Natural bars which I used to eat all of the time, I seem to have accidentally recreated these. Maybe I was subliminally craving one.

You can make this fruit & nut granola bars recipe your own by using what ever nuts, seeds, fruits or even chocolate you have in your cupboard.

The protein powder

I used a vanilla flavoured protein powder which I found works well with the yoghurt however you could use chocolate or any other flavour. Use a clean good quality protein powder for best nutrition.

Melt the coconut oil and honey in a medium saucepan on a low heat. Remove from the heat and add to the pan the oats, almonds, seeds, dried fruits and protein powder.

Line an 8x8 inch square baking tray with baking paper and pour in the mixture. Bake at 175°C fan/350°C/Gas 3 for 12 - 15 minutes until slightly golden on top.

In a small bowl mix together the natural yoghurt and honey then spread over the baked granola. Pop in the fridge for 1 hour or overnight until set. Cut into 16 squares and enjoy.
