Oh my these chicken and avocado wraps are my favourite wraps to make! They are delicious and full of flavour. They remind me of chicken fajitas but super fast and easy!
So the first time I made these my little brother and I were enjoying a sunny day in the garden with our pet terrapin. We had let Mr Turtleson out for a stroll around the garden. It must of slipped my mind to then begin making our dinner without washing my hands. Low and behold we ended up with the worst case of salmonella causing a long week of vomiting, turtle hallucinations and yeah we both lost about a stone in weight. So we actually call these salmonella wraps. Please don’t be put off they really are delicious 😀 and it was the enzymes from touching the turtle not my inability to cook chicken I promise 😉
Anyway…It starts with a simple marinade of chilli powder – I use mild but make it as mild or as hot as you like. Fresh chopped garlic, the juice of 1 lime, salt and pepper. Let this sit for as long as you like but I cant usually wait longer than it takes me to chop the rest of the ingredients.
It’s all about the jarred peppers… even though this is a chicken and avocado wrap. These are just amazing things that are a favourite of Jamie Oliver, they are already cooked and preserved, soft and absolutely full of flavour instantly adding dimension to the dish. You chop them up and heat them in the pan for a few minutes.
Not to mention the contrast of creamy fresh avocado with the intense flavours in the marinade and peppers, it all works beautifully and the avocado gives the wraps the guacamole element in traditional fajitas.
You can also make these chicken and avocado wraps, turkey and avocado wraps. It works just as well. Or even tofu and avocado.
