A tasty tabbouleh style salad with quinoa, salad vegetables and crunchy pumpkin seeds topped with a simple, healthy tzatziki dressing.

Ingredients

Adjust Servings:
25g rocket
25g watercress
100g cooked quinoa
1/2 diced avocado
1/4 diced Cucumber
5 quatered baby tomatoes
1 tbsp pumpkin seeds
For the Tzatziki Dressing
1/4 cup natural yoghurt
1 tbsp finely chopped fresh mint
1/2 lemon lemon juice
