Healthy Coconut & Cranberry Granola
Greetings, today I’m going to be sharing a healthy recipe – how I make my homemade granola. Healthy eating is a big part of my life, I enjoy cooking and eating foods that make me feel good, and when they taste sooo delicious, why not be healthy?
This granola is so much better than even the supermarket bought granola as that is still full of unnecessary sugars. I can tell because it comes as clusters which is formed by honey and syrups making it all stick together. And it just doesn’t taste as delicious and wholesome as making your own with raw ingredients.
To sustain a healthy diet I need foods that will fill me up because I tend to eat a lot. With all the healthy fats from the nuts it really satisfies me, thats why I love having it for breakfast.
This granola is a staple in my diet, I make a batch fortnightly and use it in loads of different ways. I have it with almond or soya milk, sprinkle it over my smoothie bowl, with yoghurt and fruit. I even crush it up with a pestle and morter and give it to my kids with yoghurt. They love it!
One last note, check the ingredients on your dedicated coconut packet that there are no sugars or preservatives. You want as raw coconut as possible.
So let’s begin. You will need…
- 1 cup oats
- 1/2 cup almonds
- 1/2 cup pecans
- 1/3 cup sunflower seeds
- 1/3 cup pumpkin seeds
- 1/3 cup lineseed
- 1/4 cup desiccated/shredded coconut
- 1/3 cup dried cranberries
- 2 tablespoons raw extra virgin coconut oil
- Good quality honey
Preheat your oven to 200°C/350°F. I use oats as the base of this granola, start by spreading them out onto your baking tray.
Next poor over your nuts and seeds. Do not add your coconut at this stage. We will add it after the granola has been in the oven otherwise it will burn. Now you can literally use any nuts or seeds that you like, hazelnuts are delicious in this, I often use chia seeds also. Just make it your own.
Mix it up a bit. Then add 2 tablespoons of coconut oil.
Now it’s going to get a bit messy. Use your hands to massage the coconut oil into everything. Mix it all up the best you can. Squeeze over a little bit of honey. I use the bare minimum to keep it as healthy as possible. But if you like it sweeter add more.
Pop it in the oven for 15 minutes. Give everything a mix half way through and turn the tray. Keep a close eye and make sure it doesn’t burn as that would be very sad.
When it comes out of the oven it should be golden and smelling beautiful. I add the coconut straight away while still hot as I feel it releases some of the oil and flavour but doesn’t get burnt in the cooking process. At this point you can also add some dried fruit. Cranberries are my absolute favourite. You could also use goji berries which are a good superfood.
Transfer your granola into a storage container and keep in the cupboard for as long as you can resist eating it all. Here are some ways I use it…

Ingredients
- 1 cup oats
- 1/2 cup almonds
- 1/2 cup pecans
- 1/3 cup sunflower seeds
- 1/3 cup pumpkin seeds
- 1/3 cup lineseed
- 1/4 cup desiccated/shredded coconut
- 1/3 cup dried cranberries
- 2 tablespoons raw extra virgin coconut oil
- Good quality honey
Instructions
- Preheat the oven to 200°C/350°F.
- Poor the oats, nuts and seeds onto your baking tray. Don’t add the coconut just yet.
- Mix it all up and add 2 tablespoons of the coconut oil.
- Massage it into everything until distributed.
- Drip over a small amount of honey or however much you like, however the more honey the less healthy.
- Put into the preheated oven for 15 minutes. Half way through mix it up and turn the tray around. Keep an eye on it and don’t let it burn!
- Once golden take out of the oven and add the desiccated coconut and cranberries.
- Spoon into a jar or container and enjoy!
